Clever Ways to Turn Holiday Leftovers into Brand-New Meals

After the rush of pre-Christmas grocery shopping, the flurry of whipping up a table full of edible delights, and the groaning discomfort of having eaten far too much in one sitting, one wakes up on boxing day feeling rather drained.

A peek in the fridge shows wall-to-wall containers jammed full of leftovers… but there's only so many times one can eat a cold recreation of Christmas lunch, and thus comes the classic question: what are we to do with all this food?

To help you cope with such quantities of leftovers, here's the food version of a glow-up - giving those plates a new look and taste:

  • Leftover boiled potatoes: Dice them into cubes and create a light but delicious quiche, or slice them thinly into a tortilla.
  • Leftover ham: Use in sandwiches, frittata, omelettes, quiche or salads.
  • Leftover barbecued or roast lamb/ chicken/ beef: Use in sandwiches, or chop into pieces and fold into scrambled eggs on toast.
  • Leftover roast veggies: Create a roast veggie salad with couscous and a honey-mustard-balsamic dressing, or blitz along with chickpeas to create a moreish hummus.
  • For any of the above, and many other leftovers that are escaping my overfed brain cells at the moment, create an epic pie. Simply combine all the leftovers, wrap them in flaky puff pastry and bake until golden and delicious!!
  • Strawberries: Chop them into chunks and freeze, or whizz them with lemon juice and a touch of sugar and freeze to create a homemade sorbet.
  • Blueberries: Freeze them as is, or convert them into muffins, banana and blueberry bread or a blueberry crumble.
  • Cherries: Remove the pips and juice them, freeze them or dehydrate them.
  • For any of the above: If you've got the wherewithall, whipping them up into homemade jam is a fantastic way to enjoy berries for months to come.
  • Leftover trifle and Christmas cake: Honestly, try as I might, I can't think of any ways to glow these rich and decadent dishes up. You're gonna have to power through, or palm them off to someone else who forgot to create these Christmas classics!
