How to Keep Fresh Spring Greens from Wilting Too Quickly

The delicate, tender, fresh spring greens are a joy to eat, but these sensitive qualities also mean there's the potential for said verdant goods to wilt and spoil more rapidly than their hardier main season versions.
To prevent one's newly-purchased greens wilting before one's eyes, there is always the option to eat them immediately.
Certainly, the flavours and textures will be unrivalled… but eating a whole bag of mesclun mix or an entire bunch of kale is easier said than done! Also, then the fun is over too soon…

To preserve the quality of our green goodness, we recommend you wash them as soon as you get home, remove excess moisture (otherwise they'll go slimy), and store them in the crisper drawer of the fridge, in one of these 3 ways (which will keep those luscious leaves fresh for up to a week):
- Place them in a ziplock bag with a puff of air: certainly not your usual, but the carbon dioxide from the puff of air can be enough to keep those greens fresh for a few more days.
- Wrap the leafy greens in paper towels and then place them in a ziplock bag: the paper towels prevent the greens from going slimy, whilst maintaining a good level of moisture (with insufficient moisture, the greens will go limp at an alarming rate).
- Wrap the leaves in paper towels, then pop them in a plastic storage container: the hard sides of the container will prevent your future salad from getting squished and bruised, and the paper towel will ensure the leaves don't dry out.
As always, we strongly recommend you wash your leafy greens (in fact, one should wash all one's vegetables) before enjoying them in a lip-smacking meal. While we do not use any chemicals and our produce is always washed before it gets sent out in your box, one can never be too sure!
