The best herbs to pair with winter vegetables

Winter veggies are hearty, warming, dense, flavourful and nourishing… but sometimes they lack a little je ne sais quoi.

Take winter dishes from being simple to simply spectacular with some small additions!

Fresh herbs bring a zesty, refreshing flavour that you perhaps didn't know were missing.

Whether you're roasting root veggies, stew-ing or soup-ing them or transforming them into a winter salad - herbs add an unrivalled depth of flavour, aroma and freshness to any meal.

From paddock to plate: here are some of our favourite combinations to make the most of this cold season's flavours:

Rosemary + potatoes, pumpkin and carrots.

Woody and oh so aromatic, rosemary packs a fair punch and works really well with those veggies with more subtle flavours. Roast potatoes, slices of pumpkin and chunks of carrot with olive oil and a sprig of rosemary for a classic side dish. A drizzle of honey and mustard, along with a splash of balsamic will have you coming back for more!

Thyme + mushrooms, leeks and parsnips.

With a delicate, subtle flavour and divine scent, thyme pairs beautifully with winter root veggies. It's particularly divine when added to creamy mushroom dishes; leek and potato soup; roasted parsnips; and slow-cooked casseroles.

Parsley + almost anything.

Far and away our most versatile herb, parsley brings a fresh and bright flavour to any savoury winter meal. Sprinkle freshly chopped parsley over steamed broccoli, cauliflower cheese, veggie soups, roast veggies and grain bowls.

Coriander + winter curries.

Bring a vibrant element to a warming winter curry with coriander's zesty notes. Throw it atop curried pumpkin, lentil and vegetable dahl and cauliflower and chickpea curry. Finished off with a squirt of lemon juice, this will transform a standard weekday curry into a family favourite!

Dill + beetroot and cabbage.

Dill’s tangy, delicate flavours work incredibly well with earthy root veggies. Pair it with roasted beetroot or any potato dish - it also pairs superbly with cabbage slaw and yogurt dressings.
