Basil potato salad

Ingredients

  • Half a kilo of Streamside swift potatoes
  • I bag of Streamside basil
  • Salt
  • 4 tbspns of olive oil
  • 1 tbspn of apple cider vinegar
  • 4 cloves of garlic
  • Salt and pepper
  • 6 Streamside Cavelo Nero Leaves
  • 4 Streamside radishes
  • 1 Streamside spring onion
  • A handful of Streamside Snow peas

Directions

  1. Clean and slice your potatoes, immerse with cold water in a pot and boil on medium heat for 20 mins until tender. Drain.
  2. In a blender, blend the basil, oil, garlic, and vinegar and season with salt and pepper, blend until you achieve a smooth oil.
  3. Quickly blanch your snow peas, for 30 seconds, then cool them in cold water.
  4. Chop up cavelo nero and boil for two mins in salted water. Drain and toss through potatoes with the basil oil.
  5. Finish with slices of radish, and spring onion and snow peas. You may add anything else you like here, eggs, mayo.
