Basil potato salad

Ingredients
- Half a kilo of Streamside swift potatoes
- I bag of Streamside basil
- Salt
- 4 tbspns of olive oil
- 1 tbspn of apple cider vinegar
- 4 cloves of garlic
- Salt and pepper
- 6 Streamside Cavelo Nero Leaves
- 4 Streamside radishes
- 1 Streamside spring onion
- A handful of Streamside Snow peas
Directions
- Clean and slice your potatoes, immerse with cold water in a pot and boil on medium heat for 20 mins until tender. Drain.
- In a blender, blend the basil, oil, garlic, and vinegar and season with salt and pepper, blend until you achieve a smooth oil.
- Quickly blanch your snow peas, for 30 seconds, then cool them in cold water.
- Chop up cavelo nero and boil for two mins in salted water. Drain and toss through potatoes with the basil oil.
- Finish with slices of radish, and spring onion and snow peas. You may add anything else you like here, eggs, mayo.
