Butter Blistered Brussels with Maple and Lime

Sweet n Sour and such a treat.

Brussels like you have never had them before.

You can add more if you like, roasted almonds, pomegranate, goats cheese.

When the produce is this good, I prefer simple.

Ingredients:

  • 4tspns sunflower oil
  • Half a Brussel stem or 16-20 Streamside Brussel Sprouts- cut in half
  • Pinch of salt
  • 40g of salted butter- cut into thin slices
  • 2 Streamside Red Onions
  • 1 streamside Lime
  • Pinch of salt

Directions: 

  1. Take a stem of Streamside Brussel sprouts and push the sprouts off one by one.
  2. Discard any yellow or rough outside leaves.
  3. Trim the bottom, slice in half. Sprinkle a pinch of salt over the Brussel cross section.
  4. Get a heavy bottomed wide saucepan very hot.
  5. Pour in your sunflower oil.
  6. Start placing your Brussels in from the outside in.
  7. Burnish until dark brown and caramelized. While you are doing this cut two red onion into 6 wedges.
  8. Place your slices of butter on top of the brussels sprouts still face down.
  9. Sprinkle your separated onions over the brussels sprouts and stir these in.
  10. Your Brussels should be really nice and brown and your onions starting to cook down, but still have a little bit of bite.
  11. Add your maple syrup and your lime juice straight after, season with a pinch of salt, stir through and serve.
