Butterbean Streamside Herb Dip
This is so versatile, use it on anything. Similar to hummus, it has fewer ingredients and easy to make. You will need a processor or a hand held stick blender with a processor attachment.
- 1 can of organic butterbeans
- Streamside parsley, a big handful of leaves and stalks
- Streamside basil, a big handful of leaves only
- Streamside carrot tops, a handful of leaves
- Three cloves of garlic peeled
1 lemon, zested and juiced - 2 tablespoons of olive oil
- 2 tablespoons of brine from the can
- salt and pepper to season
- half a teaspoon of powdered Cumin.
Method:
- Place all the ingredients into a processor and blend until smooth.
- Finish with some more olive oil and garnish with more fresh sliced herbs.
