Cheesy leek and cauliflower bake

Settling into a plate of this when spring still has a touch of cool unpredictability in the air, what a treat.

Pop in some jalapeños if you are feeling like some heat, and short of those, a little Cayenne pepper. I really like a fresh green salad with this dish, lemon and spring onions, courgette, radish and cos lettuce.

I used wholemeal flour and oat milk, Colby and tasty cheese, you can use any substitutes you have on hand and it will still be delicious.

Ingredients:

  • 20 grams of cooking oil + 30g of butter
  • One whole Streamside leek, sliced thinly
  • One garlic bulb + 2 pinches of salt
  • 60g of butter + 60 g of wholemeal flour
  • 500g/ml of milk
  • One whole Streamside cauliflower, cut into pieces
  • 80g of Tasty Cheddar + 80g of Colby cheese.
  • 50g of Jalepenos- optional, or a small teaspoon of cayenne pepper
  • Panko breadcrumbs to cover, salt pepper and dried oregano.

Directions:

  • In a large saucepan that can go into the hot oven, add the oil, melt the butter and sauté the leek and garlic with the pinches of salt on medium heat for about 15 minutes. Make sure to stir it often, not to scorch the leek.
  • Bring 2 litres of salted water to the boil, while completing the roux. Turn on the oven to 200 degrees.
  • Add the 60g of butter to the leek mixture, when melted add the flour. Cook the flour out for one minute, stirring to break up any flour in the leeks.
  • Add the milk, 100ml at a time, stirring between each addition. Turn heat to low.
  • Grate the cheese and reserve some of the tasty cheese for the topping.
  • When water is boiling, place the sliced cauliflower in and wait for it to come to the boil again, when it does, boil the cauliflower for two mins and strain well.
  • To the roux, add chillis, all of the Colby, and some of the tasty cheese. Stir this well.
  • Add cauliflower and stir until completely mixed through. Top with panko crumbs, salt, cheese and oregano flakes, and cracked pepper, turn oven down to 190 degrees and bake in the oven for, 20-25 mins until crumbs and cheese are well golden. Wait a few minutes after getting out of the oven to serve. ENJOY!
