Dark chocolate mousse
This is an epic recipe. This largely uses two ingredients. Good quality dark chocolate, and carrots. Yup that’s right carrots. I did not believe it so I had to make it myself, and as I ate it, I still could not believe it is largely made out of carrots!
You can add the rest of the ingredients if like me, the chef in you wants it a little more complex and you can make it with vegan chocolate and keep out the butter if you want this to be vegan.
This is not a light mousse, more fudgy, you can cut it after it has set in the fridge. You could lighten it up by folding in some whipped cream at the end if you wished.
Excellent as a quick whip up before guests arrive.

Ingredients:
- 430g of Streamside carrots, peeled then boiled
- 250g of dark chocolate, I used 72% Whittaker’s chocolate
- 40g of soft butter
- 1 Tbsp of Maple Syrup
- 1 big pinch of flaky sea salt
- (Optional whipped cream you decide amount.)
- Streamside Strawberries – the best you will ever have!
Directions:
- Peel and boil your carrots in just enough water to cover.
- When nearly finished, add broken up chocolate to a steel bowl and place on the boiling pot of carrots to melt. Stir occasionally.
- When carrots are boiled and chocolate is melted, drain carrots, place all ingredients into a blender, and blend. (I used one I use for smoothies, a Nutri bullet would be fine too)
- You may have to work the blender a little bit, using a spatula, scraping down the chocolate off the sides, and making sure the carrots are all completely blended, and it is completely smooth.
- It is here you can add whipped cream should you wish to keep it soft.
- You can pour into individual Molds or small cups or one lined container with non-stick baking paper, and set in the fridge for a few hours.
- This can be cut, dusted with cocoa and served with Streamside Strawberries.
