Golden Soup
This is a very easy all in one pot. The texture is unbelievably silky and a touch of ginger delivers warmth. The ingredients are so good, only a pinch of salt and pepper is needed.
Having said that, always put your tastebuds first, so if you feel like something else in this- go for it!
Chilli, curry paste, coconut cream or yoghurt- divine!
Ingredients:
- Half a Streamside celeriac, peeled and cut into small chunks
- 1/4 of a Streamside butternut squash, peeled and cut into small chunks
- 3-5 Streamside carrots sliced into small chunks (5 smaller carrots or three medium)
- A small peeled knob of fresh ginger
- Water
- Salt and pepper
Directions:
- Place all ingredients into a medium to large pot, cover with water add 2 generous pinches of salt and bring to a boil.
- Turn the heat down and bring to a mild simmer for 25 to 30 mins, enough for the carrots to fully soften.
- Blend all water and vegetables in a jug blender, add more water if needed.
- Taste for seasoning, add more salt and pepper as needed.
- Serve with delicious, toasted bread and nice oil of your preference.
