Gova Thel Dala

Literally translating to "Cabbage fried in oil", gova thel dala (let's be real, a way cooler name!) hails from the distant island of Sri Lanka and truly brings out the best cabbage can offer! Not only is it vegetarian friendly, gova thel dala is super easy and takes less than 20 minutes to cook - what more could one ask for on a weeknight, when foodie motivation is running low?! Served with your preference of rice (although we recommend Sri Lankan yellow rice or lemon rice - hit google up for a recipe!), this cabbage recipe creates a filling and hearty meal - or serve as a side to your own fabulous creation... you do you!

 

Ingredients

Half a head of cabbage

2-3 Tbsp oil 

1-2 cloves garlic, sliced

1 large onion

A sprig of curry leaves (substitute with Bay Leaves)

1/2 tsp turmeric powder

1/2 - 1 tsp red chilli flakes

Juice of 1/2 a lime

 

Method

Slice cabbage, onion and garlic. 

Place a frying pan over low heat and saute the cabbage until wilted and there is no moisture remaining in the pan. Maintain a low temperature and slowly drizzle 2 tbsp of the oil.

Add the sliced onions and garlic, along with the curry leaves and turmeric powder. Cook for at least 5 minutes, or until you see the edges of the cabbage char slightly.

Remove from heat and add the chilli flakes as well as salt (to taste). To further enhance the taste, drizzle over the lime juice and mix. 

Serve warm over your favourite rice dish.
