The Dish:
These savoury chickpeas based pancakes hail from Italy's Liguria region. They are super easy and lend themselves to all kinds of toppings.
The Ingredients:
1 cup chickpea flour
salt and freshly ground pepper
1 cup luke-warm water
¼ cup extra-virgin olive oil
½ bunch of red chard stems and leaves separated
1 tablespoon grated parmesan cheese
Flaky sea salt.
The How To:
In a bowl, combine chickpea flour and ¾ teaspoon salt.
Slowly whisk in water until a smooth batter with no lump's forms. Wisk in 2 tablespoons oil. Let stand, covered, at room temperature at least 1 hour or refrigerate up to overnight, Wisk before continuing.
Cut chard into 3 cm pieces, and leaves into 10cm pieces. Heat a large skillet over medium -high. Add 1 tablespoon oil and chard stems. Cook until stems soften, 3 minutes.
Add leaves, cook tossing occasionally, until wilted, about 3 minutes. Season with salt and pepper.
Preheat oven to 180 deg. Place 24cm pan in oven for 15mins
Remove pan from oven and swirl 1 teaspoon oil on the base.
Add the batter then chard.
Bake until cooked through and golden brown on the edges about 15 minutes.
Sprinkle with parmesan cheese, salt and pepper and serve.
Delicious fresh out of the oven.
