Spiced Pumpkin Latte
This is rich slightly sweet only slightly spiced and can even replace your lunch!
This makes 5 large mugs of latte, keep it in the fridge for when the craving strikes.
Alternatively, you can half this recipe if you wish. Use any milk you prefer.
Ingredients:
- 200 grams of Streamside Organic Pumpkin sliced into small 1cm chunks – Buttercup Squash is used here
- 500Ml of water with a pinch of salt
- 1 1/2 teaspoons of cinnamon powder
- 1/8 of a teaspoon of nutmeg powder
- ¼ of a teaspoon of cardamom powder
- 60 grams of Maple syrup
- one teaspoon of vanilla extract
- 800 mls of your milk of choice
Directions:
- Bring your chopped pumpkin to the boil in a small pot of 500 ml water then lower it to a simmer for 15 minutes.
- Turn off the heat, let that steep, and cool down for 5 minutes.
- Then place the rest of the ingredients in a blender jug, blend until smooth. Strain into a container, and enjoy at your leisure.
- Reheat the amount you would like to drink either in the mug in a microwave or on a pot on the stove top. Add milk to your preference.
- OPTIONAL: You could make it ‘dirty’ by adding some coffee too.
